2 large Fuji or Honey Crisp apples; peeled, cored, and sliced between 1/4 and 1/2 inch thick slices
1/2 tsp. cinnamon
1/4 c. lemon-lime soda, I used what I had on hand, Sierra Mist
Saute’ all ingredients in skillet set on medium heat and covered for about 3-5 minutes, until still slightly firm. Uncover and pour liquid into pork tenderloin pan as directed in the recipe to follow. Keep warm on low heat, or covered, until ready to serve with pork tenderloin.
Serves two people, double recipe for four people.
